REDUCED stands at the forefront of B2B upcycling, pioneering innovative approaches in fermentation technologies to develop savoury food ingredients from industry side streams. Our mission is to elevate the power of gastronomic sciences to food industry quality standards and contribute delicious taste solutions for a more responsible food production system. As a growing food tech startup, we’re looking for a talented Fermentation Scaling Engineer to join our team and help us scale and expand our upcylcing technology.
As a fermentation scaling engineer you will have the critical role to scale up REDUCED fermentation savoury taste technology. Specifically, the successful candidate will be responsible for scaling up solid and liquid state fermentation processes from bench-top experiments to pilot and full production scales. This role requires expertise in fermentation science, technology transfer protocols, process engineering and, the development of comprehensive product and process specifications. This is a dynamic and hands-on role that will involve moving between our shared R&D laboratory at Copenhagen University, our pilot scale production facility at Nordhavn and a variety of CMOs.
Process Scale-Up:
Design, execute, and oversee the transition of fermentation processes from laboratory scale to pilot and production scales, ensuring process robustness and scalability.
Ensure that capability targets are constructed, and that a cross-functional program is designed and implemented.
Drive technology expansion program to fulfil capability needs and gaps.
Process Technology Management:
Serve as the primary technical liaison in R&D, ensuring that full scale production knowledge is seamlessly transferred across the organization.
Monitor and evaluate technology performance and address technical issues that arise during production.
Development of technology transfer documentation.
Spearhead needed production capabilities in the future to further fuel the potential of upcycling technologies for flavour development.
Documentation and Data Management:
Define detailed process descriptions, standard operating procedures (SOPs), and data sheets to support technology transfer and regulatory submissions.
Maintain accurate records of experimental designs, results, and process modifications, ensuring data integrity and traceability.
Compliance and Quality Assurance:
Ensure all production processes comply with relevant industry regulations and internal quality standards.
Participate in audits and contribute to continuous improvement initiatives related to process quality and compliance.
Scale fermentation technologies from L 1 to L 10 to L 100, up to L 10.000 while maintaining process efficiency, reproducibility, and quality.
Set-up cross-functional alignment to meet the project targets and ensure the building of strong fermentation capabilities in REDUCED
Develop and maintain accurate process documentation, including data sheets, standard operating procedures (SOPs), and statistical analyses to guide continuous improvements.
Regulatory & Quality Compliance: Ensure all fermentation processes align with industry regulations, food safety requirements (e.g., FSSC 22000), and company quality standards. Guarantee food safe and quality products at scale.
Timely Project Execution: Deliver fermentation scale-up and optimization projects on schedule, supporting the company's new product development (NPD) and operational goals.
Master’s degree in Chemical Engineering, Biochemical Engineering, Microbiology, or a related field.
Proven experience in scaling up fermentation processes from laboratory to production scale, with a focus on both solid and liquid state fermentation.
Experience of bioreactor design, process control, and optimization techniques.
Excellent problem-solving skills, attention to detail, and the ability to work collaboratively in a team environment.
Strong communication skills, with the ability to prepare clear and concise technical documentation.
Experience in managing external manufacturing partnerships or CMOs is highly desirable.
Proficiency in data analysis and statistical process control tools.
