Title:Cultivated Meat – sustainable media and upscaling
Research area and project description:Cultivated meat is a future way to produce the same nutrients as traditional meat, with expected reduced impact on the environment. However, for cultivated meat to enter the market, an affordable and scalable product is a prerequisite for success, as well as a quality that resembles conventional meat or similar functionality.
To address this challenge Department of Food Science has a portfolio of research projects with synergies where this position is part of a larger investment in cellular food at Aarhus University, lead from our group at Department of Food Science.
This Phd project will exploit the option of using sidestreams from ongoing food production as a nutrient resource in the media for cultured cells and further evaluate the muscle satellite cell pool and upscaling conditions (e.g. basic process parameters for bioreactor settings) for sustainable and optimal upscaling.

Qualifications and specific competences:Applicants to the PhD position must have a relevant Master’s degree in food science, or similar with documented experience in biochemical/molecular biology analysis and preferable cell culture technologies
