Faculty of Science, Department of Food Science is looking for a dedicated candidate for a 2-year postdoc position within the section Design and Consumer Behavior. The research will concern identification and quantification of the molecular characteristics, including protein-protein interactions, and the relationship to protein functional properties and nutritional parameters of proteins and protein ingredients derived from legume grasses and green leaves. An important part will be to establish the applicability of grass and leaf protein fractions as food ingredients to produce healthy and sustainable food products. Development of food prototypes with grass and leaf protein ingredients is included in the research. The candidate must have qualifications and experience in food related grass and/or leaf proteins, protein physico-chemical characteristics and methodologies, as well as protein techno-functional properties and food prototyping.
The postdoc’s duties will include research within grass and leaf food proteins as well as teaching. The post may also include performance of other duties.
